Slope, overhang and the drip edge
Three details make a crown shed water. The top slopes away from the flue so rain runs off instead of sitting. The edge overhangs the brick below so water falls clear of the chimney face. And a drip edge, a small groove or kerf under that overhang, stops water from curling back along the underside and into the brick.
A crown built flush with the brick, or with a flat top, sends water down the face of the chimney with every rain. Crowns that carry several flues
A chimney with two or three flues needs a crown that slopes away from every tile, keeps a bond break at each one and leaves room between them for water to run off. Low spots between flues are where water tends to sit on older crowns.

What a crown coating can and cannot do
A crown coating is a thick, flexible layer brushed onto a sound crown to bridge fine cracks and slow water entry. Its maker's data asks for a clean, sound and dry surface, and it adds no strength, restores no lost slope and reattaches no loose pieces.
