Mortar for new chimney brickwork
BIA recommends Type N portland cement-lime mortar for chimneys, and accepts Type S where wind or other sideways forces on the stack are high.
The general rule in BIA's mortar note points the same way, toward the weakest mortar type that still does the job. Stronger is not automatically better. Mixing is done by measured volume on site so each batch matches the last, which keeps the color and strength even across the new section.
For your rebuild, the pick between N and S depends on height, exposure and brick, and the estimate names it.
The space between the flue tile and the brick
Clay tiles are not mortared solid to the chimney wall. Florida's residential code leaves a gap between the tiles and the masonry, filled with air or with insulation that is no thicker than the liner.
The code also says to use only enough mortar to make the joint and hold the liners in position. Packing the gap with mortar ties the tile to the brick and can crack it as the flue heats.

Throwing water clear of the rebuilt brick
Water that runs off the crown and down the face soaks into the new brick. A drip edge on the crown, which the code requires, sends it clear of the face instead.
Where the crown does not overhang, BIA suggests corbeling the last two courses out to form a drip. The code limits how far each course may step out, which keeps the corbel stable. A drip that works keeps the face of the new brick noticeably cleaner over the years.

Rebuilding a chimney after storm damage
Wind can pull the top off a weak chimney, and a fallen limb can crack a stack. What looks like a few missing bricks can hide loosened courses further down.
The first step is making the chimney safe, removing loose brick and covering the flue opening against rain. The rebuild follows once the damage has been assessed. Pieces that have already fallen are left where they lie until the area is safe to reach.
