Precast crowns as an option
A crown does not have to be cast on the roof. Brick Industry Association Technical Note 19B reports that precast chimney caps generally perform better than cast-in-place ones, and it describes setting them on a mortar bed with a bond break between the brickwork and the setting bed. A precast crown is made at ground level, cured properly and lifted into place.

Thickness and shape of a new crown
A crown needs enough thickness to hold its reinforcement and resist cracking at the edge, and a shape that slopes from the flue out to the overhang. Brick Industry Association guidance warns against thin, feathered edges, which break away first.
