Identifying the mortar already in the chimney
A good repair starts by knowing what is there. A visual check of the old mortar's color, texture and hardness tells a mason a lot, and a sample can be sent to a laboratory when more detail is needed.
BIA notes that laboratory testing can show the proportions of the original mix, so the repair can follow it closely. On most chimneys, careful visual matching is enough. Even the simple check of hardness and porosity that the National Park Service describes narrows the choice considerably.

Mortar for chimneys that take strong wind
A chimney stands above the roof with nothing to shelter it, so wind pushes on it from every side. BIA's chimney guidance says Type S mortar is acceptable and may be necessary where a chimney faces high lateral forces such as wind.
BIA's mortar selection note likewise points to Type S for stronger applications in high-wind areas, and Type N for normal brickwork. Type S is harder than Type N, so on softer or older brick the stronger mix is not automatically the better choice.

Repairing the sloped shoulders of a chimney
Where a chimney steps in above the fireplace, the brick forms a sloped shoulder that collects rain. BIA recommends setting uncored or paving brick on a bed over that slope for weather resistance.
A mortar wash is the alternative, and BIA notes it may be less durable. When one is used, it should fill each step individually instead of bridging across the slope. Water that gets through a cracked wash runs straight into the core of the chimney below.

Chimney masonry work with its own specialty
Chimney masonry repair covers the brick and mortar of the stack as a whole. Some jobs within it have their own methods: replacing individual spalled bricks, repointing joints only, repairing stucco, and working on natural or manufactured stone.
Stucco and stone need materials suited to them, and BIA's mortar guidance applies to clay brick only. Plenty of chimneys need some of every kind, and separate lines keep the price easy to follow.
