Chimney masonry above the roof and below it
The section above the roof takes rain from every side and dries in the sun, so it usually shows wear first. The section below the roofline, on an outside wall or inside the house, is more sheltered but can hide water damage coming from above.
Repairs above the roof deal with weather. Repairs below it often deal with the results of water that got in higher up. Stains on an inside wall beside the chimney often trace back to a joint or crown several feet higher.

How the brick itself shapes the mortar choice
Bricks differ in how quickly they soak up water, a property BIA calls the initial rate of absorption. A thirsty brick pulls water out of fresh mortar fast, which can weaken the bond.
BIA advises pairing high-absorption brick with a mortar that holds its mixing water better. Bond depends both on how much of the brick the mortar touches and on how strongly it grips. BIA's table even separates thirsty brick laid dry from the same brick wetted before laying.

Mortar for chimneys that take strong wind
A chimney stands above the roof with nothing to shelter it, so wind pushes on it from every side. BIA's chimney guidance says Type S mortar is acceptable and may be necessary where a chimney faces high lateral forces such as wind.
BIA's mortar selection note likewise points to Type S for stronger applications in high-wind areas, and Type N for normal brickwork. Type S is harder than Type N, so on softer or older brick the stronger mix is not automatically the better choice.

How deep old mortar comes out of a joint
Shallow repairs pop out. The National Park Service calls for raking joints to at least two to two and a half times their width, and BIA gives a similar rule of at least twice the width, generally about three quarters of an inch.
If sound mortar lies deeper than that, removal stops there. If the mortar is soft further back, it continues until sound material is reached. The National Park Service gives that depth as what keeps new mortar from popping out of the joint.
