The mortar types used on chimney masonry
Masonry mortar is classified under ASTM C270 into Types M, S, N and O, from strongest to weakest. BIA describes Type N as the general all-purpose mortar, Type S as stronger, Type M as very strong but hard to work, and Type O as a low-strength mix for interior and restoration work.
For chimneys, BIA recommends Type N, with Type S as the alternate. BIA points to Type M where masonry is in contact with the earth, and keeps Type O mostly for interior and restoration work.

How deep old mortar comes out of a joint
Shallow repairs pop out. The National Park Service calls for raking joints to at least two to two and a half times their width, and BIA gives a similar rule of at least twice the width, generally about three quarters of an inch.
If sound mortar lies deeper than that, removal stops there. If the mortar is soft further back, it continues until sound material is reached. The National Park Service gives that depth as what keeps new mortar from popping out of the joint.

Brick veneer over a wood-framed chimney
Not every brick chimney is solid masonry. Where brick veneers a wood-framed chimney, Florida's residential code requires through-flashing and weep holes, so water behind the brick can drain out.
BIA advises opening clogged weeps carefully so the flashing behind them is not damaged. Blocked weeps can hold water against the framing. Wood framing behind veneer can stay wet for a long time without showing anything on the brick face.

What a chimney should not be asked to carry
Under Florida's residential code, a chimney carries only its own weight unless it was designed and built to take more.
Over the years, antennas, brackets and other attachments get fixed to chimneys. Their fixings open holes in the masonry, and their weight and wind load add stress the chimney was not built for. Removing an attachment leaves anchor holes, and filling them is part of the masonry repair.
