Repointing compared with face grouting
Repointing means cutting out deteriorated mortar and packing new mortar into the joint. BIA calls it the generally recommended method because it suits a wider range of joint damage than face grouting.
Face grouting is a lighter repair for hairline cracking only. Once joints have eroded, crumbled or opened up, grout alone does not rebuild them. Grouting also leaves the old mortar in place, so it only suits joints where that mortar is still hard and holding firmly to the brick.

Identifying the mortar already in the chimney
A good repair starts by knowing what is there. A visual check of the old mortar's color, texture and hardness tells a mason a lot, and a sample can be sent to a laboratory when more detail is needed.
BIA notes that laboratory testing can show the proportions of the original mix, so the repair can follow it closely. On most chimneys, careful visual matching is enough. Even the simple check of hardness and porosity that the National Park Service describes narrows the choice considerably.

How deep old mortar comes out of a joint
Shallow repairs pop out. The National Park Service calls for raking joints to at least two to two and a half times their width, and BIA gives a similar rule of at least twice the width, generally about three quarters of an inch.
If sound mortar lies deeper than that, removal stops there. If the mortar is soft further back, it continues until sound material is reached. The National Park Service gives that depth as what keeps new mortar from popping out of the joint.

When masonry work needs an engineer first
Some conditions are beyond masonry maintenance. BIA's guidance says structural issues generally warrant a professional engineer, and lists signs such as out-of-plane movement, cracks through several bricks and heavy rust on steel supports.
A lean, a bulge or a chimney separating from the wall falls in that group. Repairing the surface first can hide the evidence an engineer needs. Once the engineer has set out what is needed, the masonry repair follows that direction.
